We are seeking an experienced Executive Chef who will lead kitchen teams, maintain high standards of food quality and hygiene, and ensure consistency across all meal services for students, boarders, staff, and visitors.
 
Job Description
Position:              Executive Chef
Reporting to:        Catering & Dining Service Manager 
Collaboration:      All Staff, Students and Parents 
Position Type:      Full-Time (including occasional evenings and weekends as required)
Role Overview:    This role is responsible for leading all kitchen production and culinary operations across the school’s catering provision. The role oversees food preparation, kitchen organisation, production planning and operational delivery to ensure a safe, efficient and high-quality catering service across the 7-day boarding operation.

Qualifications and Experience
Essential:
  • Bachelor’s degree or Diploma in Hospitality, or a related field.
  • Minimum of 7 years of relevant operational or hospitality experience.
  • Relevant professional culinary certifications, including Food Safety and Food Hygiene certification.
  • Understanding of food safety and hygiene requirements.
  • Willingness to train as a First Aider.
  • Experience in large-scale catering or hospitality operations.
 
Desirable:
  • Experience working with contracted service providers.
  • Knowledge of dietary, allergy, and nutrition considerations.
  • Certification in food safety or hospitality supervision.
  • Experience in a boarding school or educational environment.

Key Responsibilities
1. Kitchen Operations & Food Production:
  1. Lead the day-to-day operation of the kitchen and food production areas.
  2. Ensure all meals are prepared and delivered to agreed quality and presentation standards.
  3. Oversee kitchen workflow, production planning and service coordination.
  4. Support the effective delivery of local and international menu provision.
 
2. Budgeting & Cost Control:
  1. Support kitchen budgeting and forecasting processes relating to food production and staffing requirements.
  2. Monitor food costs, portion control and kitchen expenditure.
  3. Support cost-effective menu execution while maintaining quality and operational standards.
 
3. Food Safety & Compliance:
  • Maintain high standards of hygiene, food safety and kitchen cleanliness.
  • Ensure compliance with HACCP procedures and operational food safety requirements.
  • Support temperature logging, food storage procedures and kitchen documentation systems.
  • Be an active member of the Food and Nutrition Committee.
 
4. Compliance and Standards:
  • Support adherence to health, safety, and food hygiene regulations.
  •  Ensure that safeguarding, confidentiality, and child protection expectations are fully upheld in all interactions with students. 
  • Monitor and report to Facilities Maintenance or Campus Management any issues affecting dining areas. 
 
5. Events and Special Occasions:
  • Assist in planning and delivering Open Days, special dining events, school functions, and visiting guest meals. 
  • Ensure a professional, welcoming atmosphere that reflects the Charterhouse Lagos brand and ethos.
